As a mum I have to admit some days are better than others. Some days I feel like a total rock star and other days well, not so much.
This little recipe is a bit of a cheat, a shortcut let’s call it to feeling like a domestic goddess when really you just want to hide in a closet with a chocolate bar.
It’s great for BLW or finger food for dairy-free babies and kids and they are so tasty everyone else in the house will love them too.
Preheat oven to 175
Unroll 1 pack of Jus-Rol (or own brand) puff pastry. (I always triple check it’s the one that says suitable for vegans)
Grate 1/4 a pack of Violife for pizza or other vegan cheese onto the dough. Sometimes I combine different types by adding the parmesan style or cheddar. You can use any type of vegan cheese you like.
Fold the dough in half with the cheese spread as evenly as you can and roll with a rolling pin until it’s evenly about 4-5mm thick.
Slice into 1cm strips. I also usually cut those strips in half so they are the right length for little hands. Twist 2 or 3 times gently and place on ungraded cookie sheet.
Bake for 12-15 mins until golden brown. Cool on pan.
Store in an airtight container. I like to reuse takeaway containers and split the batch into 2. I leave one batch out on the counter and put the other one in the freezer so that I can take one out and thaw as needed. The twists will thaw in 20-30 mins at room temperature or just a few mins in the oven. They are a lifesaver on fussy days or when I’m in a rush. A cheese twist and some veg or fruit with a bit of chicken is a great meal for a little one on the go.
